The most delish cake ever – Pumpkin Cake

I got this recipe from a  flatmate many moons ago when I flatted in Brooklyn, Wellington. It is so yummy especially with cream cheese icing. It has a spicy flavour and a smooth look to it that mnay people would not guess that it had pumpkin in it. It is one of my show peice cakes along with a choclate cake out of “Ladies, A Plate”.

Here is the recipe:

Pumpkin Cake

125g Butter

1 ¾ C Flour

1 ½ C Sugar                                        

2 tsp Baking Powder

2 Eggs                                                 

1 tsp Baking Soda

1 C Cooked Pumpkin                          

1 tsp Salt

2/3 C Milk                                          

2 tsp Cinnamon

½ tsp of Ginger & Nutmeg                    

 Cream butter & sugar. Add the eggs one at a time. Combine cooked pumpkin with milk. Sift together dry ingredients. Add to butter mixture alternating with pumpkin mixture.

 Bake in greased tin at 180 degrees C for 35-45 minutes or until cooked. Ice with cream cheese icing.

 *** 2 cups of raw pumpkin makes approx one cup of cooked pumpkin.

      Yeah it is fab! I love the old classics. Have made a few recipes so far. It was a Christmas pressie form Dean.
