Yesterday I did a lot of baking for the kindergarten golf tournament fundraiser. I made two double batches of muffins and a double batch of the Chocolate Slice I have already posted on here about. I used two of Mum’s recipes that are favourites and that are delicious and reliable. I did apple muffins “Aunt Jess’s Apple Muffins” and then one my Mum baked at their Cafe “Double Chocolate Muffins” but she adds a twist. 😉
The recipe’s are below for you as they are a firm favourite and I hope they will be for you too. 🙂
Double Chocolate Muffins
1 3/4 C Flour 1/4 C cooa
1 tsp Baking Soda 1 C sugar
1 Egg 100 g melted butter
1 C yoghurt 1/2 C milk
vannila essence 1/4 – 1/2 C choc chips or melts
Mix flour, cocoa, baking soda and sugar. Mix liquid ingrediants off egg, butter, yoghurt, milk and vannila essence and add to dry. Fold in choc chips.
For a twist: Put a good sized spoonful of the mixture into each muffin tray portion. Then drop a small thumb nail size of cream cheese in each one and the add a small dollop of jam (I like to use raspberry or strawberry). Then place the rest of the mixture on top covering the secret inside.
Decorate tops by dusting with icing sugar. For Christmas occasions you can place a halved cherry and some pieces of chocolate on top 10 minutes into cooking.
Bake at 180-200 degrees C for 15 -20 minutes

Aunt Jess’s Muffins
1 C grated apple (skin as well) 1 tsp mixed spice
225 g Butter 1/2 tsp cinnamon
pinch of salt 1 egg
85 g sugar 45 g butter
3 tsp baking powder 2/3 C Milk
(Can add sultanas)
Put apple, flour, salt, sugar, baking powder, spice and cinnamon into bowl. Break in egg and mix in melted butter and milk. Mix all together and put into greased muffin tin. Sprinkle tops with chopped nuts and brown sugar. Bake at 200 degrees C for 20 minutes.
