From the oven

I am loving the oven we have here. It beats the stupid HIT oven we had while house sitting.

I have made some yummy goodies recently but haven’t always taken photos.

Here are the yummy strawberry muffins that are a great whip up kind of recipe especially if you have a can of starwberries or frozen fruit on hand. I have posted the recipe for the Basic Fruit Muffins here.

Strawberry Muffins

I have also made a new cake called Crazy Cake that a lady posted on The Nappy Network in the food & recipes section. It is called Crazy Cake as it is doesn’t have milk or butter.  It is very quick and easy to make and tastes delicious. We ended uo eating the cake without even icing it! It was a family hit so is a firm favourite here.

Here is the recipe:

Crazy Cake

1 1/2 C flour
2 T cocoa
1 tsp cinnamon
1 tsp ground ginger
1 tsp each baking soda and salt
1 C sugar
1/2 C oil
2 T vinegar
1 tsp vanilla essence
3/4 C water

Line the bottom of a ring or 20cm square tin with baking paper. lightly butter and flour the sides of the tin.

Measure the first 6 ingredients and sift into a fairly large bowl.

Add the sugar and toss to mix in with the other ingredients.

Measure the oil and add to the dry ingredients without stirring it in.

Add the vinegar , vanilla and water and stir well with a fork until smooth.
Pour the mixture into the prepared tin and bake at 190 degrees Celcius for 30-40 mins until the centre of the cake springs back when touched with a finger, and a skewer comes out clean. Leave cake in the tin for 4-5 mins, then turn out onto a wire rack and leave to cool. dust with sieved icing sugar or ice with chocolate icing.
