This was a recipe my Mum and Jo used to make for sale at Mainline Station. Mum wrote out lots of recipes from my childhood and the cafe into a special journal recipe book. It is one of the best Christmas present’s ever.
Chocolate Almond Slice
Cream 6 oz butter & 3/4 C sugar
Add in 2 small eggs, 1.5 C flour, 1.5 tbsp cocoa powder & 1.5 tsp baking powder.
Put in a greased slice tin and bake for 20 minutes at 170 degrees.
When the chocolate base is cold or nearly cold put the almond filling made up with:
Cream: 6 oz butter, 12 oz icing sugar
Mix in: 2 egg yolks, 6 oz cornflour & 3 tsp almond essence
Chill for a little bit and then top with chocolate icing.
